Refrigerator Not Cooling: Protect Food and Decide What to Check Next

If your refrigerator is not cooling, make two decisions separately:

  1. What the available temperature, time, and food-item evidence requires now.
  2. What the refrigerator’s observable condition justifies checking next.

Do not wait for the appliance to recover before making a food-safety decision. A temperature setting is not the same as a measured compartment or food temperature, and an appliance recovery period does not extend a food-safety limit.

This guide stays outside component diagnosis and repair. Smoke, a burning or electrical abnormality, or another safety-significant condition is outside this cooling-performance sequence. Stop using this guide and follow the appropriate manufacturer, professional, or emergency safety guidance for that condition. Do not remove panels or continue toward electrical, refrigerant, fan, compressor, or other internal-component work.

First: Protect Food and Improve the Evidence

The FDA says a refrigerator should be kept at 40°F (4°C) or below and a freezer at 0°F (-18°C). Because many refrigerator controls show a setting rather than the actual compartment temperature, the FDA recommends separate appliance thermometers for the refrigerator and freezer. If food may be warming:

  • Keep door openings brief while you determine what to do.
  • Read an appliance thermometer if one is already inside. If practical, use a food thermometer for an individual package only when applicable official guidance for that specific item and scenario supports using that measurement to change its disposition. The reading applies only to the measured item; it does not establish the temperature or safety of other foods, reconstruct earlier exposure, or resolve or reverse an earlier unresolved exposure merely because the item was re-cooled, transferred to another cold source, or measured after conditions materially changed.
  • Record the time evidence you actually know: a known outage start, a verified alarm or log, or another reliable timestamp. If the time above 40°F is unknown, do not invent it from when you first noticed the problem.
  • If you can move perishable food to another working refrigerator or to a cooler with ice or frozen gel packs, keep it at 40°F or below and verify the temperature. Smell, taste, touch, condensation, or “it still feels cold” cannot establish a consequential food-safety decision. Never taste food to decide whether it is safe. Food can be unsafe even when it looks and smells normal. (CDC; FDA)

Priority rule: If more than one row could apply, an unknown or unresolved prior exposure—or materially changed conditions, including re-cooling or transfer to another cold source before measurement—takes priority over the current-temperature row. A current cold measurement does not reconstruct earlier temperature history.

For frozen food in the official outage context, FDA and CDC say food that still contains ice crystals or is at 40°F or below may be refrozen or cooked, although quality may decline. Current temperature or ice-crystal evidence must not be used retrospectively to erase an unknown prior exposure when the food was re-cooled, transferred to another cold source, or conditions materially changed before observation. Controlling rule: appliance recovery does not retroactively make earlier food exposure safe. A manufacturer’s recheck period tells you when an appliance observation may become more meaningful; it never changes the independent food route.

Measure What the Refrigerator Is Doing

Start with separate measurements for the refrigerator and freezer. Record:

  • refrigerator temperature;
  • freezer temperature;
  • the time of each reading;

  • whether the doors had recently been opened;

When to Move to Service

Use manufacturer-authorized service when:

  • the next useful investigation requires removing a cover or panel, reaching a fan, electrical testing, component testing, refrigerant or sealed-system work, or another service-level procedure;
